Nutritious French Toast with Baked Banana, Dates and Almond butter & Maple syrup sauce


French toast has always been a nostalgic recipe for me – one of my favorite breakfasts to start the day right. Now that I’m older, I still want to enjoy the delicious flavor and nostalgic feeling that eating French toast brings. However, I also want to nourish my body with nutritious ingredients. That’s why I’ve created this delightful recipe for traditional French toast, but with extra toppings to make it a healthy indulgence.


Ingredients:

  • 2 slices of whole-grain bread

  • 100 ml organic whole milk

  • 1 egg

  • 1 tsp cinnamon

  • 1/2 tsp cardamom

  • 1/4 tsp clove

  • Pinch of sea salt

  • 1 ripe organic banana

  • 1 tsp almond butter

  • 2 tsp maple syrup

  • 1 Medjool date

  • Handful of nuts & seeds (depending on your Seed Cycle)


How to Make This Recipe:

1. Make the batter:

In a bowl, whisk the egg and add the cinnamon, cardamom, and clove. These spices help calm the body and support healthy digestion, which is important in Ayurveda for balancing your doshas. Then, add the milk and mix everything together well.


2. Soak the bread:

Dip the slices of bread into the batter, ensuring the bread absorbs the flavors. While this is soaking, heat a pan over medium heat.


3. Cook the French toast:

Melt a small piece of butter or a teaspoon of ghee in the pan, and place the soaked bread slices in. Let them cook for a few minutes on each side until they are golden brown and crispy.


4. Prepare the banana:

Slice the ripe banana into rounds about 1 cm thick and dip them in the leftover batter. Cook the banana in the pan for 3-4 minutes on each side until slightly caramelized.


5. Make the almond butter syrup:

Mix the almond butter and maple syrup in a bowl. Thin it out with a little milk and add a pinch of sea salt to balance the flavors.


6. Serve:

Serve the French toast with the caramelized banana, sliced Medjool date, and a handful of nuts, seeds, or grains (based on your Seed Cycle). Drizzle the delicious almond butter-maple syrup sauce over the top for the perfect finish!
