Flaxseed Pancakes with Banana, Nuts, and Dates



In the past, I used to eat those unhealthy, thick pancakes from a package filled with all sorts of junk, topped with a thick layer of chocolate spread. Sure, they tasted great, but my body and mind were definitely not happy afterward. I still crave sweet pancakes sometimes, but to enjoy a sweet breakfast while getting good nutrients, I now make my pancakes myself with ingredients that do me good, like flaxseeds, nuts, spices, and natural sweeteners like maple syrup and coconut blossom sugar.


Ingredients for about 4-6 pancakes:

  • 1 tbsp flaxseeds

  • 1 ripe banana

  • 1 organic egg

  • 1 tsp cinnamon

  • ½ tsp cardamom

  • ½ cup flour of your choice (I use oat flour)

  • 1 tsp coconut blossom sugar

  • 3 tsp almond paste

  • 1 tbsp maple syrup

  • 1 medjool date

  • A handful of pecans and walnuts

  • A few pumpkin seeds

  • Ghee (for cooking, coconut oil works too)


Preparation:

  1. Prepare the Flaxseed: Put the tablespoon of flaxseeds in a separate bowl and add 3 tablespoons of water. Let it sit for about 10-15 minutes.


Steps to make 4-6 delicious pancakes:

Batter:

  1. Mash the ripe banana in a bowl.

  2. Add the egg and mix it thoroughly with a whisk or fork.

  3. Add the spices and mix again.

  4. Gradually add the flour until you reach your desired thickness. (If you want it a bit thinner, add a splash of milk to thin out the batter.)

  5. Add the flaxseed mixture you prepared earlier and stir well.

  6. Mix in the teaspoon of coconut blossom sugar for sweetness.

Cooking:

  1. Heat the ghee in a pan over medium heat.

  2. Spoon the batter into the pan in small amounts (about 2 tbsp per pancake).

  3. Let the pancake cook until it's firm and the top bubbles slightly, then flip it over and cook the other side.

Serving:

  1. Place the pancakes on a plate and spread the almond paste over each pancake.

  2. Slice the date into small pieces and add them on top.

  3. Roughly chop the handful of nuts and sprinkle them on.

  4. Top with the pumpkin seeds.

  5. Drizzle the tablespoon of maple syrup over the pancakes (or more if you prefer them sweeter). You can also add a little extra coconut blossom sugar if desired.


And you're done! You can always customize these pancakes with your favorite toppings. Just remember to choose ingredients that suit your dosha. Enjoy this delightful sweet recipe—I know I certainly will now!
