Creamy Mushroom Risotto with Hidden Veggies – Nourishing & Comforting Dinner

One of my favorite nutritious comfort meals! This creamy mushroom risotto is packed with flavor and hidden veggies, making it the perfect healthy and satisfying dinner. With crispy nuts, melted cheese, and an optional touch of truffle, this dish is truly next-level!
Ingredients (serves 2)
2 cloves garlic (finely chopped)
1 onion (finely chopped)
200 g mixed mushrooms (e.g., chestnut mushrooms, shiitake, oyster mushrooms)
1 fennel bulb (chopped) – Great for Vata!
½ zucchini (diced)
2 large handfuls of fresh spinach
150 g risotto rice
600 ml broth (preferably without artificial additives)
1 handful mixed nuts (lightly toasted, no oil)
30 g raw cheese (e.g., Grana Padano or Parmesan) – Less ideal for Kapha
Optional: fresh truffle or truffle tapenade
Optional: fresh herbs like parsley, thyme, or rosemary
Optional: pan-fried halloumi for extra flavor
Ghee for Vata & Kapha / Coconut oil for Pitta
Instructions
Sauté the base: Heat a pan over medium heat and melt some ghee. Sauté the garlic and onion until soft and translucent.
Add the veggies: Stir in the mushrooms, fennel, and zucchini, cooking for a few minutes until softened.
Toast the rice: Add the risotto rice and stir for a minute until the grains are lightly coated and glossy.
Gradually add broth: Pour in the broth little by little, allowing the rice to absorb it before adding more. Keep stirring until the risotto is soft and creamy (about 20 minutes).
Finish with spinach & cheese: Stir in the fresh spinach at the end until wilted. Add the grated raw cheese for an extra creamy texture. Want a gourmet twist? Mix in some truffle tapenade or fresh truffle!
Top with nuts & extras: Lightly toast the nuts in a dry pan and sprinkle them over the risotto. Garnish with extra cheese and fresh herbs like thyme, rosemary, or parsley. For a savory touch, add pan-fried halloumi.
